Butler's Restaurant & Tavern
Featuring farm-to-table options with a focus on local ingredients, the menu at this Burlington dining establishment is a bold reinterpretation of American contemporary cuisine. We offer a wine list recently recognized as one of the best in the world by Wine Spectator magazine, including more than 800 selections. Butler's is open for dinner, 6 p.m.-9 p.m. daily. We also offer our unrivaled Sunday brunch 10 a.m.-1:15 p.m. Reservations are recommended.

Executive Chef David Coolidge
Burlington-born Chef Coolidge grew up in Los Angeles before traveling back home to graduate from New England Culinary Institute and joining the staff at The Essex in 2000. An American Culinary Federation silver medal award-winning instructor, Chef Coolidge specializes in approachable, creative cuisine, incorporating Vermont products as much as possible. He was appointed Executive Chef of The Essex Resort & Spa in the fall of 2009.
